The Water Scalding and Kneading Machine (IWC-Y) is an industrial system designed to integrate the scalding and kneading processes of curd in kashar cheese production.
It ensures that the product reaches an elastic, homogeneous, and workable structure, providing quality and continuity in production.
Working Principle
The curd is brought into contact with hot water and scalded homogeneously.
It is then processed through the integrated kneading system and brought to the desired consistency.
Throughout the process, temperature and operating parameters are kept under control.
The water in the brine pool located under the machine is heated by steam through a serpentine coil.
With the circulation pump, water is continuously transferred into the chamber.
In the final section, the product is kneaded by means of the kneading arms.
